They like me! Oh no, they like me....

Cooksonia

Ours is a peaceful nation of Cooksonia. We live, we love, we eat. Today we received an envoy from the nation of Les'cookso'much. He came to our leader with an offering of Taste and Bud. This was a rich nation. One built upon all the food groups not just four. They're offering and message was simple. Gaze upon what we have done and Be hungry!


Dear Cooksonia:

I wanted to send you some pics of the carnitas we made today. Boneless pork shoulder, seasoned with Cumin, garlic, chili powder, cilantro, limes, sweet onions, peppers, tomatoes, peaches,  slow cooked in my  enameled  La Creuset  pan, crisped under the broiler. Home made Pico Da Gio and spaghetti squash, seasoned with smoked mesquite salt and fresh ground Malabar pepper and dusted with brown sugar.

We could not beat them. Never in our history have we ever fought a battle with so many spices. So much barbecue. So much meat. The nation of Les'cookso'much, would not be stopped by a mere island power such as Cooksonia. But we have a Navy and we have our pride. Our leader leads. Our Generals general. And the people warm the oven. We may lose but the fork will not be laid down without answer!


Our armies breakdown:

3/4 cup soy sauce 

2 teaspoon White cooking wine

2 teaspoon Seasoned rice vinegar

2 teaspoons sugar

4 tablespoon Stirfry oil

4 tablespoon Ground ginger

4 teaspoon Minced garlic

2 teaspoon cornstarch

3 Mixed bell peppers

3 Green jalapenos

3 Yellow jalapenos

4 Tomatoes

2 pounds ground beef

Diced onions

Tortillas


Our sauces were made, soy sauce rice vinegar cooking wine sugar and cornstarch. Put together and mixed and placed on the side.


Our jalapenos  were cut up and blended and placed on the side.


Our bell peppers were cut up to put a French fry to shame. Added in with the onions and set to await stir frying.


The ground beef received its preparation, but stopped just before completion.


To the peppers and onions they received the stirfry oil. They were stirfried just before loss of crispness.


Then it was time for all things to come together in tomato. The meat was further season to taste. Then added in with all the other ingredients and stewed.


When placed on a tortilla and sprinkled with cheese the denizens of the nation Les'cookso'much may not feel a battle lost. But they would know that the island nation of Cooksonia would not roll over this day and only now will we put the fork down!

This story was inspired by my friend  Leslie Hennick. Who sends me his cooking pictures and makes me want to be a better cook. Or kidnap a better cook and lock him in my basement.
